Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.
Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance.

This Puppy is Sharp

Global continues making really sharp functional knives. I bought this 6" Serrated Knife to cut things from bread to tomatoes to slicing onions for a sandwich. This puppy is flat out sharp outta the box and cuts through these things I mentioned with absolute ease.
One of the best serrated knives.

This knife was over $30 cheaper than Amazon or other popular retailers, but I took a chance, and was very happy I did. Would definitely get my knives from Sointu again.

We bought this knife a long time ago and still love it. We purchased a second one to give to our son for his birthday. He had tried ours and really liked it. We use ours every day to slice bread, meat and vegetables. This site has the best price on all the global knives.

This is great for working with things like tomatoes. And small bread/pastry items. It's on the lighter side. Great #3 knife behind a good 8" chef's knife and a paring knife. I am not sure how things will go when I need to sharpen this knife because it is serrated. I'll probably need to pay someone for that since I do not own the special tools required. Or I'll just have to buy another when the time comes. In the meantime, I will just be careful with it.

Buying a great knife shouldn't be difficult, but yet it is. I feel like Goldielocks sometimes. That is not the case with this knife. It is just right. I especially love the handle and the confidence I have in the grip.

My wife and I have been collecting Global blades for about 6 months, researching and purchasing one a month, and this is our fourth (and my favorite). The serrations firmly grip the skin of any fruit or vegetable for paper-thin slices, and the fine-ground tip goes right to the core of a cabbage or can swipe out a potato's eyes like an afterthought. I marvel at the razor edge of our Global 4.25" parer, or our larger chef's knife, but this little serrated beauty is usually the first I reach for. At this price, it's an embarrassment not to add it to your rack.
