Product Description
This knife is intended for cutting vegetables. The heel of the knife is square-shaped, convenient for removing stalks and eyes from vegetables.
Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.
Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance.

My favorite knife

This is my favorite of the global knives. A friend used ours at our house and it was all she could talk about so I bought her one for her birthday! So happy to find Sointu. Able to buy a very specific single knife and it arrived in a few days.

I used this knife for the first time and I couldn't believe how easily it cut. I sliced carrots with absolutely no effort at all. I love the curved blade and the thin handle. Perfect for me. I give it my highest recommendation.

It fits nicely in your hand and cuts vegetables so precisely and easily. It has a curved blade so that you can rock it through veggies. It is really a dream to use.

Perfect little knife for slicing vegetables, so sharp and agile but the best part is the shape and the way the knife can rock back and forth or slice through. This knife exceeded my expectations which is rare.

Global knives were recommended to me by a good friend that is a personal chef, he said I would not be sorry and he was 100% correct.
The first thing you notice about the knife is how seamless the finish is, the next thing you notice is the balance. Balance may not seem like it’s important but from the short time I have used these knives I can tell you that the balance makes cutting so much easier and you don’t get tired from struggling with the extra effort needed with cheap knives.
You can’t go wrong with these knives. -

This was a replacement of one I bought over 20 years ago. Dropped it on a hard stone floor and only recently was able to purchase again. Every bit as wonderful. Lightweight, thin and keeps its edge. One day, I want to buy a whole set!
