A knife suited primarily for cutting meat into pieces. It can also be used as a multi-purpose knife for cutting meat and vegetables.
Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.
Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance.

I have at least 7 chef's knives (including this one), with a couple of them costing me at least three times as much as this one, but this knife is by far the best and my absolute favorite. I bought this back in June 2018 and it is currently November 2018 and there has been absolutely no need to sharpen this on a stone. All it needs is a quick honing each time on a steel and the edge is razor sharp. The weight is also just perfect for me and is very well balanced. To top it off, just look at those gorgeous aesthetics!

The knife is amazing. It's razor sharp and very comfortable to use. Will be ordering more global knives. Where I live the exact same knife is $40.00 more.

Bought as a birthday gift for my son-in-law. I have a number of Global knives including this one, and they are all beautifully balanced and a real pleasure to use. I would add that the prices at Sointu USA are the best I have found and the service is very efficient.

I believe in purchasing quality products whenever I can afford it, so as not to keep replacing things that, in the best circumstances, should last a lifetime. Global knives fit this description and then some. I have no doubt that my growing collection will be an heirloom someday for my children, they're that well made. When you pick up a Global blade and grasp it, the sense of wielding a single length of exceptional steel, no tang, no guard, no handle pieces, is palpable. The edge to which the blade is ground is the most keen you've ever seen. It cuts through meat like a whisper. Global isn't low-cost, most casual cooks buy entire knifesets for the price of a single Global slicer, but they are an excellent value, and the prices and services at Sointu cannot be beat. Add a blade or two to your collection every once in awhile, they'll last generations, and you'll have something quality and meaningful to pass along.
