A knife suited primarily for cutting meat into pieces. It can also be used as a multi-purpose knife for cutting meat and vegetables.
Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.
Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance.

I have been cooking every single day for more than 30 years. Including the hand-crafted Japanese knife that is my primary tool, I used so many different knives. This Global chef knife 8" is one of the best. It makes cutting and slicing so easy and smooth.

My wife loves this knife. Her hands are small and not too strong. It fits her hand perfectly, and she appreciates the light weight. I had to talk her into using it to replace her previous large chef's knife. She's overjoyed she did. And it has the sharp blade all the Global knives have.

Ever since using Global knives when preparing a meal at a friend's home in California, I have wanted to get a Global chef's knife and a Global paring knife. I was very pleased with the purchase. Highly recommend Global knives to amateur chefs. They are very sharp and hold an edge. Look forward to years of use.

The Global G2 meets every expectation I had after reading rave reviews about it online. It's a pleasure to use the knife and I end up chopping vegetables way more than necessary simply to use the knife more! I have at least 7 chef's knives (including this one), with a couple of them costing me at least three times as much as this one, but this knife is by far the best and my absolute favorite. I bought this back in June 2018 and it is currently November 2018 and there has been absolutely no need to sharpen this on a stone. All it needs is a quick honing each time on a steel and the edge is razor sharp. The weight is also just perfect for me and is very well balanced. To top it off, just look at those gorgeous aesthetics!
