This knife combines the advantages of both a vegetable knife and a chef's knife. It can be used for a wide range of purposes, including usage for meat, vegetables and fish.
Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.
Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance.

Very well balanced and makes short work of the larger jobs. Extremely sharp and the edge is easy to maintain. My first Global knife, of course now I have more and continue to expand my collection. A GREAT bargain for the knife you get.

This knife has perfect balance and shape and is wonderfully sharp - and the terrific price on the Sointu site makes it reasonable for the non-wealthy home cook. This knife is just right for the amount and variety of things you need to cut for a typical family meal, especially for those of us who usually rocker cut rather than push cut (though now I have my eye on a Global straight-blade too!).

Knife has very good balance, and comes to you very sharp. The weight is good and it's a lot more comfortable then I thought it would be. I expect to buy more in the future.

Bought this for my collection and it has rapidly become a favorite. Very sharp and well balanced and a delight to use. Despite the title of "oriental" chef's knife it is very versatile. Highly recommended as is the pricing and service from Sointu USA.

This is one of my favorite knives I've used it for years. The price you have sold it to me was very reasonable. I average one of these every year or every two years. I bought my first Global knife several years ago and haven't looked back. I have smaller hands and Global knives fit me perfectly and are a dream to use. I bought this one so I don't have to keep cleaning my Santuko during marathon cooking sessions - I like the pointy end for piercing the skin of tougher vegetables. Love it.

I broke in my new knife with veggies first. Cuts like them like butter. Beautiful knife. My daughters never know what to get me for my birthday, so I saved them the headache and bought my knife. I sent them a photo. One said," are you planning to commit suicide?" The other said, "looks like fun! Then came the cutting of the proverbial slippery chicken. Yep, nicked my finger tip! My wife said, like most who don't like us, "I was waiting for that to happen!" I got mine on sale. Anthony Bourdain's recommended it. Buy the knife.
