This knife is an all-purpose knife. It can be used for cutting meat, vegetable and fish. The knife has a hollow ground edge allowing effective separation of food from the blade.
Global knives are unique because of their edge and the way they are balanced. The most important feature of any knife is its edge, and the Global edge is truly its signature. The majority of the Global knives are sharpened or ground on both sides of the blade like western style knives. However, their edges are ground straight to a point rather than beveled resulting in a dramatically sharper knife which stays sharper longer. The edge is so large and prominent that it is easily seen with the naked eye and extends a quarter inch or more up from the tip of the knife.
To balance their knives, Global uses a hollow handle which is then filled with just the right amount of sand to create the correct balance. Global uses this method rather than using a full tang and a bolster to balance their knives for two reasons. First, it is a far more precise than using a tang and a bolster. Second, Asian knives typically do not have bolsters, since they only serve as a hindrance to cutting and sharpening.
Global knives are made from the finest high carbon stainless steel available for producing professional quality kitchen knives. Yoshikin uses its own proprietary stainless steel which it calls CROMOVA 18 Stainless Steel. This steel is hard enough for Global knives to keep their edge for a long time, but soft enough so that it is not too difficult to sharpen the knives. The CRO in CROMOVA 18 stands for chromium and the 18 is the percentage of chromium in the steel. This high percentage of chromium contributes to Global's good stain resistance.

This is my 4th Global Knife. They are expensive but well worth the investment. Once a year they get sharpened and I will endow them to my girls.

I'm a professional and spoiled with great stuff in my kitchen. Should have bought all globals when I first started out. They are a dream beyond all the other great knives in my kitchen!

I'm just an everyday cook, a husband who tries to cook decent meals. I've used Cutco, Henkle, and other knives but decided to upgrade to a couple of Santoku Knives. Man what a difference! Chicken, beef & veggies are so much easier to slice. The knives cut nice and smoothly. I highly doubt I'll ever use anything else.

I love this chef’s knife. Perfect size and shape for most kitchen chopping and slicing. The one piece of metal design is super sanitary and the weight is just right for me. Some folks might prefer a heavier knife though.

I have used this brand for a very long time. They are the best and their price is quite affordable considering their quality of high caliber. This time I wanted to try the Santoku knife and again, I'm not disappointed.

Bought this and a smaller utility knife as birthday gifts for my son to add to his expanding collection of Global knives. I have the same knife and can attest to the great balance and edge of this and to the uniformity of feel from one blade to the next. I would add the service from Sointu USA is superb and the prices are excellent.
